Avocado Cucumber Salad

Ingredients needed for salad:

1 can of chickpeas, rinsed well, soaked in spring water for 30 minutes and then I shell each chickpea. This actually reduces gas and bloating.

1 red onion, diced

1 jar of Greek Kalamata olives, drained.

1 bushel of fresh cilantro, no stems.

2 large cucumbers peeled and diced

1 handful of grape or cherry tomatoes, halved


Place all salad ingredients in a large serving bowl. Put in the refrigerator to chill as you work on the salad dressing.


Ingredients needed for dressing:

6-8 key limes, just the juice

1/4 cup of avocado oil or extra virgin olive oil

4 avocado, chopped and blended somewhat smooth or 1 container of chunky guacamole

Seasonings/Spices. I use

Garlic powder

Oregano

Black Pepper

Cayenne

Smoked Paprika

Onion Powder

Basil

Parsley


In a medium to large mixing bowl, combine all ingredients and mix well.


Take salad out of the refrigerator and begin to fold ingredients for dressing throughout salad. Coat well. Cover and refrigerate until ready to enjoy. Salad is good for 3 days. Enjoy!
