Roasted Potatoes

Preheat oven to 375 degrees

Red Russet potatoes

Yellow onion, chopped

Avocado oil, drizzle nozzle

Glass baking dish


Select the desired amount of red russet potatoes you wish to prepare. Why red russet and not golden potatoes or any other? Red russet are more alkaline.


Wash and peel potatoes. Slice as you desire. Dice your onion. Drizzle your oil lightly on the bottom of the glass baking dish. Place in your potato and onion mixture.

Use fresh herbs as often as you are able. I used parsley, cilantro, thyme, chives, green onion, Celtic salt, black pepper, onion powder, oregano, basil, cayenne pepper, and a dash or so of smoked paprika.

Drizzle a bit more of the avocado oil over the potatoes and onions and use a spoon to toss the mixture so that everything is evenly coated with herbs and seasonings.

Potatoes will roast for 40-45 in a small dish depending on your desired taste. Up to an additional 10 minutes or so for a bigger dish.
